Celery and Apple Salad

• 1 small celery heart, julienned
• 1 crisp apple, thinly sliced
• 2 tablespoons fresh lime juice
• 1 teaspoon green peppercorn, minced
• 1 -2 tablespoon extra virgin olive oil
• salt

1. Combine celery and apple in a mixing bowl.
2. Combine the dressing ingredients in a jar and shake vigorously to blend.
3. Pour over apple and celery and mix thoroughly.
