Icebox Fruit Cake
- 1 c. orange peel
- 1 c. lemon peel
- 1 c. citron peel
- 1 c. candied pineapple
- 1 c. candied cherries
- 1 c. dates
- 1 c. dark or light raisins
- 1 c. figs
- pinch of salt
- 1 c. pecans and walnuts
- 1 tsp. cinnamon
- 1 tsp. nutmeg
- 1 tsp. spice desired
- 1 c. butter
- 1 c. honey or light corn syrup
- 1 Tbsp. lemon flavoring
- 1 lb. graham crackers
- Put fruit and nuts together.
- Mix the butter and honey together.
- Add the flavoring and pour over the fruit.
- Let stand 2 hours.
- Mix the crackers and spices together and the salt.
- Mix all the ingredients together and pack in a greased, lined pan and cover.
- Put in the refrigerator until you use it.
