Red mole with chicken

  1. Quarter and boil whole chicken
  2. On a flat hot griddle put peppers down in one layer turn after two minutes then remove from heat
  3. Clean the peppers of any seeds or veins (these are not spicy at all)
  4. Place peppers in the blender with garlic onion clove cumin peppercorn stock from chicken and 3/4 of the red mole add salt blend until smooth
  5. When the chicken is done place in a pan with about 5tbsp of oil cook chicken lightly on both sides and add mixture from blender and let boil 20-35 minutes
