Sherried Raspberry-Pear Jam
- 1-1/2 cups washed and crushed raspberries
- 2-1/2 cups peeled, cored and finely chopped ripe Bartlett pears Safeway 1 lb For $1.88 thru 02/09
- 2 Tbsp. lemon juice Safeway 4 ct For $5.00 thru 02/09
- 2 tsp. lemon or orange rind
- 5 cups sugar
- 1/2 cup sweet sherry
- 1 box Certo Pectin Crystals
- MEASURE prepared fruit into a large saucepan.
- Add lemon juice and rind.
- MEASURE sugar and set aside.
- STIR fruit pectin crystals into fruit and mix well.
- PLACE saucepan over high heat and stir until mixture comes to a full boil.
- STIR in sugar.
- Continue to cook and stir over high heat until mixture comes to a full rolling boil.
- Boil hard 1 minute, stirring constantly.
- Remove from heat.
- STIR in sugar.
- STIR and skim foam for 5 minutes to prevent floating fruit, adding sherry after 2 minutes.
- POUR quickly into warm, sterilized jars filling up to 1/4 inch from rim.
- SEAL while hot with sterilized 2-piece lids with new centres.
