Chewy Spice Cookies
- 1 c. packed brown sugar
- 3/4 c. unsweetened applesauce
- 1/4 c. molasses
- egg substitute to equal 1 egg
- 2 1/4 c. all-purpose flour
- 2 tsp. baking soda
- 1 tsp. ground ginger
- 1 tsp. ground cinnamon
- 1/2 tsp. ground cloves
- sugar
- In a bowl, combine brown sugar, applesauce, molasses and egg substitute until well blended.
- Combine flour, baking soda and spices; stir into molasses mixture.
- Drop by teaspoonfuls 2 inches apart onto baking sheets that have been lightly coated with nonstick cooking spray.
- Sprinkle with sugar.
- Bake at 375u0b0 for 8 to 10 minutes.
- Yield: About 3 1/2 dozen.
- Nutritional Analysis: One cookie equals 56 calories, 15 mg sodium, trace cholesterol, 12 gm carbohydrate, 1 gm protein and trace fat.
