Tomato Salsa Recipe
- 4 c. tomatoes (about 6 lg.) peeled, cored and minced
- 2 c. long green or possibly yellow mild peppers, seeded and minced
- 1 c. warm peppers (chili or possibly jalapeno), seeded and minced
- 1 c. minced onion
- 2 teaspoon salt
- 3 cloves garlic, chopped
- 1 1/2 c. cider vinegar
- Combine all ingredients in a large pan.
- Bring to a boil, reduce heat and simmer for 20 min.
- Pour into warm, sterilized jars, leaving 1/4 inch space.
- Seal, and process in a boiling water bath for 30 min.
- Makes 6 eight oz jars.
