Stevedoro Casserole
- 4 hard-boiled eggs, sliced
- 2 tomatoes, sliced
- 220 g tuna, drained
- 1 tablespoon butter
- 125 g mushrooms, sliced
- 34 cup light sour cream
- 2 eggs, beaten
- 2 teaspoons soy sauce
- 4 tablespoons parmesan cheese, grated
- pepper, to taste
- Preheat oven to 190.C.
- Place sliced eggs, tomato and tuna in layers in a buttered casserole or ovenproof dish.
- Melt butter & saute mushrooms before adding to the casserole.
- Mix together all other ingredients except cheese and pour over the casserole, sprinkle with grated cheese.
- Cook in a moderately hot oven 190.C for 30-40 mins or until mixture is set.
- Turn up heat for last 5 mins to crisp to cheese top.
- Serve with rice or spaghetti.
