Blue Corn Muffins Recipe
- 1/2 c. diced sweet red pepper
- 1/4 c. diced onion
- 1/2 c. shortening
- 1 1/2 c. Blue cornmeal
- 1/3 c. sugar
- 1 teaspoon salt
- 1 c. lowfat milk
- Cooked bacon bits (optional)
- 1/2 c. diced sweet yellow pepper
- 1 tbsp. vegetable oil
- 1/4 c. plus 2 tbsp. butter, melted
- 1 c. flour
- 1 tbsp. baking pwdr
- 2 Large eggs, lightly beaten
- 1/2 c. half & half
- Saute/fry peppers and onion in vegetable oil till tender.
- Combine dry ingredients well.
- Then add in liquid and Large eggs till just moistened.
- Pour into greased and heated muffin tins.
- Bake for 25 min at 350 degrees.
