Mexican Meatloaf
- 1 pound ground beef, lean
- 1 pound ground veal
- 3/4 cup black olives pitted, coarsely chopped
- 1/2 cup cornmeal
- 2 large eggs lightly beaten
- 1 medium onions chopped
- 1/4 cup jalapeno pepper pickled
- 2 large garlic cloves chopped
- 1 teaspoon chili powder
- 1 teaspoon oregano dried
- 1 teaspoon salt
- Preheat oven to 350F (180C).
- Combine all ingredients in large bowl (hands work best for mixing) Gently pack mixture into greased 9x5x3 inch loaf pan.
- Bake for 1 1/4 hours or just until cooked through.
