Stuffed Chicken Breasts
- 4 pieces Chicken Breasts
- 1 package Stovetop Stuffing
- 1 can Mushroom Soup
- While preparing the chicken, preheat your oven to 350 degrees.
- Have ready four or five toothpicks to seal each chicken breast.
- Prepare Stovetop stuffing according to package instructions and set aside to moisten (or use homemade if you prefer).
- While stuffing is moistening, pound each chicken breast flat with a meat tenderizer.
- Place a few tablespoons of stuffing on top of each flattened breast.
- Close the chicken around stuffing and seal shut with toothpicks.
- Spray a sufficiently sized baking pan with cooking spray.
- Place rolled up breasts in pan and pour undiluted mushroom soup over breasts, making sure to cover all the meat.
- Cover with foil and bake in 350 degree oven for 20 minutes.
- Remove foil and spoon soup over the chicken again (it will be much runnier now).
- Replace foil and bake for another 10-20 minutes or until chicken is fully cooked.
- Goes well with mashed potatoes and steamed broccoli.
