Wild Rice Waldorf Salad
- 1 tablespoon Land O Lakes Butter
- 8 ounces boneless skinless chicken breasts, cut into bite-sized pieces
- 2 teaspoons freshly grated lemon zest
- 1/4 teaspoon cracked black pepper
- 3 tablespoons vegetable oil
- 1 tablespoon sugar
- 1 tablespoon apple cider vinegar
- 1/4 teaspoon salt
- 10 ounces (2 cups) cooked wild rice
- 1/4 cup dried tart cherries
- 1 medium (1 cup) sweet apple, chopped
- 2 tablespoons chopped green onion
- Melt butter in 10-inch nonstick skillet over medium heat; add chicken, lemon zest and pepper.
- Cook, stirring often, 5-7 minutes or until golden brown and cooked through.
- Combine all dressing ingredients in bowl; mix well.
- Add all salad ingredients and cooked chicken; mix well.
- Serve warm or cold.
