Pumpkin Fritters

  1. Boil pumpkin cubes untill soft, drain and then mash.
  2. Add the flour, salt and egg to the pumpkin and mix thoroughly.
  3. In a seperate bowl, mix the sugar and cinnamon together.
  4. Poor enough oil into a pan for deep frying and heat.
  5. Scoop up heaped tablespoons of batter and drop it into the pan (be careful not too add them too close together).
  6. Fry untill firm and golden brown on the underside (bubbles will form around the edges and on top) and then flip over to fry the other side.
  7. Put the fritters on paper towels to help drain the oil and sprinkle with the sugar and cinnamon mix.
