Pumpkin Fritters
- 500 grams Pumpkin Cubes
- 215 ml Self Raising Flour
- 35 ml Sugar
- 3 ml Cinnamon Powder
- 2 ml Salt
- 1 Egg
- 1 Oil (For Frying)
- Boil pumpkin cubes untill soft, drain and then mash.
- Add the flour, salt and egg to the pumpkin and mix thoroughly.
- In a seperate bowl, mix the sugar and cinnamon together.
- Poor enough oil into a pan for deep frying and heat.
- Scoop up heaped tablespoons of batter and drop it into the pan (be careful not too add them too close together).
- Fry untill firm and golden brown on the underside (bubbles will form around the edges and on top) and then flip over to fry the other side.
- Put the fritters on paper towels to help drain the oil and sprinkle with the sugar and cinnamon mix.
