Corn Pone Pie
- 1 lb. ground beef
- 1/3 c. onion, chopped
- 1 Tbsp. sugar
- 2 tsp. chili powder
- 1 c. canned tomatoes
- 1 (15 oz.) can pinto beans
- 1/2 c. corn meal
- 1/2 c. flour
- 1 Tbsp. sugar
- 1/4 tsp. salt
- 2 tsp. baking powder
- 1 egg, beaten
- 1/2 c. milk
- 2 Tbsp. cooking oil
- Combine meat, onions, sugar
- and chili powder and saute until meat changes color.
- Add
- tomatoes and pintos and simmer for 15 minutes.
- While
- this cooks, mix cornbread:
- corn meal, flour, sugar, salt, baking
- powder, egg, milk and cooking oil. Mix well. Put meat mixture
- in
- a greased casserole, then put cornbread over and cook at 425u0b0 for 25 to 30 minutes.
