Waikiki Meatballs
- 1 12 lbs ground beef
- 23 cup crushed saltine crumbs
- 13 cup minced onion
- 1 egg
- 14 cup milk
- 2 tablespoons cornstarch
- 12 cup sugar
- 1 (15 ounce) can pineapple chunks, drained, with juice reserved
- 13 cup white vinegar
- 1 tablespoon soy sauce
- 13 cup chopped green bell pepper
- 1 cup rice (or more)
- In a large bowl, combine ground beef, cracker crumbs, onion, egg, milk.
- Shape mixture by rounded tablespoonfuls into meatballs.
- Bake at 350 for 30 to 35 min.
- In a small bowl, combine the cornstarch, sugar, reserved pineapple juice, vinegar and soy sauce.
- Mix until smooth, then pour into skillet.
- Cook, stirring constantly, until mixture thickens and boils, about 5 minutes.
- Stir in the meatballs and green pepper and pineapple chunks.
- Heat through.
- Serve over rice.
