Honeydew Blueberry Popsicles
- 12 honeydew melon
- 2 pints blueberries
- 1 lime
- 12 cup water
- 2 tablespoons honey
- 1 tablespoon finely chopped of fresh mint
- In a small sauce pan combine the water, honey, zest of the lime and mint.
- Bring to a boil over high heat, remove it from the heat and cool completely.
- Seed, cut off the rind and cut the honeydew melon into 1 inch cubes.
- Add honeydew chunks, blueberries and lime juice to a blender.
- Process until smooth.
- Strain the honey mixture into the melon, pulse one or two times, until incorporated .
- Pour into popsicle molds.
- Freeze until firm.
- Nowadays you can often pick up the milds at the dollar store but if you don't have any you can just pour the mixture into small paper cups.
- Cover the cup tightly with plastic wrap then insert a stick.
- Cooking time does not include freezing time.
