Turkey Casserole
- 2 to 3 c. meat, flaked
- 1 medium onion, chopped fine
- 1 c. diced celery
- 4 eggs
- 8 slices stale white bread, crusts removed
- grated cheese to cover (Parmesan or sharp Cheddar)
- 1/2 c. Miracle Whip
- 1 medium green pepper, chopped fine
- 3 c. milk
- 1 can mushroom soup
- Cube bread and place half of it in a well buttered 9 x 12-inch baking dish.
- In a separate bowl, mix meat, Miracle Whip, celery, onion and pepper. Spread mixture over bread and put rest of bread on top.
- Beat eggs slightly and add milk, salt and pepper to taste.
- Pour over mixture. Cover with foil and place in refrigerator several hours or overnight.
- Take foil off and bake in a 325u0b0 oven for 15 minutes. Remove foil and spread mushroom soup over the top, then grated cheese.
- Bake, uncovered, at 325u0b0 for 1 hour.
- Serves 6 to 8.
