Bebe's Zucchini Spice Muffins
- 1 egg
- 12 teaspoon salt
- 12 cup light vanilla soymilk
- 12 teaspoon canola oil
- 34 cup rice flour
- 14 cup whole wheat flour
- 12 teaspoon baking powder
- 1 teaspoon cinnamon
- 4 teaspoons apple pie spice
- 12 cup Splenda granular, sugar substitute
- 12 cup zucchini, grated
- Preheat oven to 350 degrees.
- Prepare muffin pan with nonstick spray.
- Whisk all wet ingredients together.
- Mix all dry ingredients together.
- Add wet ingredients to dry ingredients and mix well.
- Fill muffin cups halfway up with batter.
- Bake 20 minutes or till golden brown.
