Taco Pie
- 1 lb lean ground beef
- 1 medium onion, diced
- 1 medium bell pepper, diced
- 2 -3 jalapeno peppers, diced fine (optional)
- 1 (8 ounce) package frozen corn
- 1 teaspoon garlic powder
- 2 teaspoons chili powder
- 12 cup tomato sauce
- 14 cup salsa
- 2 cups shredded colby-monterey jack cheese or 2 cups cheddar cheese
- 2 cups cooked white rice
- 3 large flour tortillas
- Preheat oven to 350 degrees and lightly grease a round casserole dish.
- Cook beef, onion and peppers together on medium high heat until meat is done through and drain of any grease.
- Add tomato sauce, salsa, corn and seasonings to the meat mixture and bring to a boil stirring frequently.
- Once brought to a boil reduce to a simmer and continue to cook until most of the liquid has evaporated stirring occasionally.
- Once your meat mixture is done you can start layering your "pie".
- Spoon 1/4 cup of rice onto the bottom of your casserole dish, then 1/4 cup of meat mixture, then 1/4 cup cheese and press a tortilla on top.
- Contiue with the remaining layers ending with cheese.
- Bake at 350 degrees for 10 minutes or until cheese is completely melted.
- Slice into wedges and serve with sour cream!
