Broccoli Stilton Soup
- 2 tablespoons coconut oil
- 1 tablespoon butter
- 1 onion, diced
- 1 garlic clove, minced
- 2 cups broccoli stems, grated
- 8 ounces chicken stock
- 12 cup Stilton cheese, grated
- heat oil and butter in sauce pan.
- add onion and garlic - saute.
- add stock and grated broccoli - cook on low for about 25 minutes.
- add stilton, stirring until melted.
