The Realtor's Spinach Au Gratin

  1. In a saucepan, melt butter.
  2. Add flour, mustard, salt and pepper.
  3. Gradually add milk and cook until thickened, stirring constantly.
  4. Remove from heat and add 2/3 cup of the cheese to sauce.
  5. Stir until cheese is melted.
  6. Wash and drain fresh spinach and chop coarsely.
  7. Place in 12x9x2 inch buttered baking pan.
  8. Pour cheese sauce over spinach.
  9. Mix remaining cheese with bread crumbs.
  10. Sprinkle over casserole.
  11. Bake at 375F (190C) for 30 minutes or until crumbs are browned.
