Kani (Crab) Salad
- 1/4 cup mayonnaise
- 2 tbsp rice vinegar
- 1/2 tsp sugar
- 1 tsp sriracha
- 1/2 tsp paprika
- 1/2 tsp grated ginger
- pinch salt
- 1/2 lb imitation crab sticks
- 1 mango
- 1 cucumber
- 3/4 cup panko bread crumbs
- Whisk the first 7 ingredients for the dressing and set aside.
- Shred the crab sticks by hand pulling apart each strand.
- Juilenne the mango and the cucumber avoiding the pit and seeds.
- Place all ingredients in a bowl and toss with the dressing.
- When ready to serve top with panko.
