Sweet Lemon Chicken
- 1/4 c. all-purpose flour
- 1 chicken, cut up
- 1 can frozen lemonade
- 3 Tbsp. brown sugar
- 1 Tbsp. vinegar
- 1 Tbsp. cold water
- 1 tsp. salt
- 2 Tbsp. vegetable oil
- 1/2 c. water
- 3 Tbsp. catsup
- 1 Tbsp. cornstarch
- 2 c. hot cooked rice
- Combine flour and salt.
- Dredge chicken in flour mixture and brown in hot oil in large skillet.
- Combine lemonade, water, sugar, catsup and vinegar.
- Stir well and pour over chicken. Bring to a boil and reduce heat.
- Cover and simmer 45 to 50 minutes until tender.
- Remove chicken to serving platter and keep warm.
- Measure pan drippings and add enough water to make 1 1/2 cups liquid.
- Combine cornstarch and 1 tablespoon cold water. Stirring until smooth, add cornstarch mixture to pan drippings and return to skillet to cook, stirring constantly until smooth and thick.
- Serve over chicken with rice.
