Four Bean Salad
- 1 can green beans, drained
- 1 can yellow beans, drained
- 1 can chick peas, drained
- 1 can kidney beans, drained
- 1/2 green pepper, thinly sliced
- 1/2 red pepper, thinly sliced
- 1 red onion, thinly sliced
- 1/2 c. white sugar
- 1/2 c. vinegar
- 1/2 c. vegetable oil
- garlic, salt, and pepper to taste
- pinch of dry mustard
- Mix first 7 ingredients together and set aside.
- Mix sugar, vinegar, oil and seasonings together.
- Whisk "dressing" until sugar is melted and oil is well blended.
- Pour over bean mixture. Mix well and refrigerate.
- This recipe should be made 24 hours prior to eating.
- If using frozen beans, use 1 cup of each bean type.
- Makes approximately 9 cups, serves 12.
