Sausage and Provolone Scrambles
- 1 tablespoon extra-virgin olive oil (EVOO) (1 turn of the pan)
- 1 patty of Italian sweet sausage or 1 link, split open and casing removed
- 2 eggs, beaten
- 1 teaspoon (several drops) hot sauce, such as Tabasco
- Salt and freshly ground black pepper
- 2 deli slices sharp provolone, cut into 1-inch dice
- Heat a small nonstick skillet over medium heat.
- Add the EVOO and break up the sausage into the pan.
- Cook until browned all over, about 5 minutes.
- Beat the eggs with the hot sauce and salt and pepper.
- Add the eggs to the sausage and scramble to desired doneness.
- Add the cheese.
- Loosely cover the skillet with foil and let stand for 30 seconds or so to start the cheese melting over your scrambles.
- Slide the sausage scrambles onto your plate and eat.
