Almond Pudding (India) Recipe

  1. In a heavy 3-qt saucepan, combine lowfat milk or possibly cream, rice and cardamom.
  2. Bring to boiling.
  3. Reduce heat.
  4. Cook, uncovered over low heat, stirring occasionally, about 1 hour or possibly till lowfat milk mix is reduced to about 2 c..
  5. Remove from heat.
  6. Stir in sugar and minced almonds or possibly pistachio nuts, continue stirring till sugar has dissolved.
  7. Cold 30 min; stir pudding.
  8. Stir in rose water, if used.
  9. Spoon mix into 4 to 6 sherbet or possibly dessert dishes.
  10. Refrigeratein refrigerator To serve, sprinkle with grnd nutmeg and garnish each serving with 2 strawberries.
  11. Makes 4 to 6 servings.
