Cranberry Apple Pie

  1. In
  2. saucepan combine cranberries and apple cider.
  3. Cook and stir
  4. until
  5. cranberries
  6. pop
  7. (5
  8. to 8 minutes).
  9. Combine sugar, cornstarch
  10. and mace; stir into hot cranberries.
  11. Cook quickly, stirring constantly, until mixture thickens.
  12. Remove from heat. Stir
  13. in
  14. apples.
  15. Set
  16. aside to cool.
  17. Meanwhile, prepare basic pastry dough and
  18. line
  19. a
  20. 9-inch pie plate with half
  21. the dough. Turn
  22. cranberry-apple
  23. mixture
  24. into
  25. pastry lined pie plate.
  26. Dot with butter.
  27. Roll out remaining pastry for top of pie and finish in
  28. the usual way.
  29. To prevent over browning, cover edge of pastry
  30. with
  31. foil.
  32. Bake in 375u0b0 oven for 30 minutes.
  33. Remove foil;
  34. bake
  35. for
  36. 25
  37. minutes or until crust is golden brown. Cool
  38. on
  39. wire
  40. rack.
  41. A fluffy brandy topper makes this pie extra special.
