Blueberry Oat Bran Muffins Recipe
- 1/4 c. whole wheat flour
- 3/4 c. white flour
- 1/2 c. brown sugar
- 1 c. oat bran cereal
- 4 teaspoon baking pwdr
- 1 c. skim lowfat milk
- 1 teaspoon vanilla
- 1/3 c. liquid vegetable oil
- 1 egg or possibly 1/4 c. liquid egg substitute
- 1 c. liquid removed berries
- Preheat oven to 400 degrees F. Combine dry ingredients in a mixing bowl.
- Stir well.
- Using an egg beater, combine lowfat milk, vanilla, egg and oil.
- Pour into dry ingredients and add in liquid removed blueberries or possibly raspberries.
- Stir just till moistened.
- Spoon batter into greased or possibly lined muffin c. and bake for 20 min.
