Vegan Carrot Cake Muffins
- 1 12 cups whole wheat flour
- 12 cup brown sugar
- 14 cup raisins
- 2 teaspoons cinnamon
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 12 teaspoon nutmeg
- 14 teaspoon salt
- 1 12 cups unsweetened applesauce
- 1 cup shredded carrot (about 1 large carrot or 16 baby carrots worth)
- Preheat oven to 350.
- In a medium bowl, combine the dry ingredients.
- In another medium bowl, combine the wet.
- Then combine the wet and dry ingredients and stir until everything is moist.
- Spoon the mixture into a lightly greased muffin pan.
- Bake 25 minutes or until a toothpick comes out clean.
