Spicy Turkey and 3 Bean Chili

  1. In non-stick skillet, heat vegetable oil over medium heat.
  2. Add ground turkey, season with salt and pepper; sautee until brown (about 7 minutes).
  3. Add diced onion, green bell pepper, and celery; sautee until onion is transluscent (about 3 minutes).
  4. Add fresh garlic and sautee another two minutes.
  5. Remove skillet from heat.
  6. Break ground turkey into small crumbles.
  7. Transfer skillet ingredients to heavy, large pot over medium heat.
  8. Add chicken broth, all beans, tomatoes with juices, green chiles, jalapeno chiles, chili powder, and ground cumin to turkey mixture.
  9. If using dried cilantro, add it at this time.
  10. Stir to mix all ingredient evenly.
  11. Cover pot with lid; reduce heat to a low; simmer 30 minutes.
  12. If using fresh cilantro, use it as a garnish when serving.
  13. May also serve with finely shredded cheese, sour cream and chopped onions.
