Cheesy Manicotti
- 1 (8 oz.) pkg. manicotti shells
- 1 (32 oz.) jar marinara sauce or 1 (32 oz.) jar thick meatless spaghetti sauce
- 2 eggs, beaten
- 1/2 tsp. basil
- 1/2 tsp. marjoram
- 1/8 tsp. pepper
- 3 c. shredded Mozzarella cheese, divided
- 1 (16 oz.) pkg. Ricotta cheese
- 1 small carton cottage cheese
- 2 Tbsp. chopped chives
- 1/2 tsp. garlic powder
- 12 crushed crackers
- 1/2 c. Parmesan cheese
- Heat sauce and water together in saucepan to boiling.
- Remove from heat and keep warm.
- Mix together cheeses and seasonings. Save 1 cup Mozzarella for top.
- Spoon mixture into uncooked shells.
- Place 1 cup sauce in bottom of 13 x 9 x 2-inch pan. Arrange shells in single layer over sauce.
- Pour remaining sauce over manicotti.
- Sprinkle with remaining cheese.
- Add some more Parmesan cheese on top.
- Cover with aluminum foil.
- Bake at 400u0b0 for 40 minutes.
- Remove foil and bake 10 minutes more.
