BBQ Chicken Sandwiches

  1. Cut each bun in half, place cut side up on a piece of aluminum foil on a rack in the oven.
  2. Turn the broiler on low and leave the oven door cracked.
  3. Check frequently (dont walk away).
  4. When buns start to get crispy, add pepper jack cheese to the bottom halves of the buns.
  5. Continue to broil with the door cracked until the cheese is starting to melt and the buns are getting slightly brown.
  6. Slice the chicken breast thinly (warm it up if its not warm already).
  7. Divide the chicken in half between the 2 buns.
  8. Top each with 1 tablespoon BBQ sauce, 1 pickle and 1/3 cup of coleslaw.
  9. Enjoy!
