Spinach Casserole (Salenchi)
- 2 Tbsp. water
- 4 Tbsp. olive oil
- 2 pkgs. frozen chopped spinach
- 1/4 tsp. each oregano, basil & garlic powder
- 5 large mushrooms, sliced (optional)
- 1 - 8 oz. pkg. shredded mozzerella cheese
- 1- 3 1/2 oz. pkg. sliced pepperoni
- Bread crumbs
- parmesan cheese
- 3 tomatoes, sliced
- Bring water and olive oil to a boil and add spinach and seasonings.
- Lower heat and cook until defrosted.
- Drain.
- Layer 1/3 of spinach in a one quart casserole dish.
- Top with 1/3 mozzarella cheese, 1/3 pepperoni, 1/3 mushrooms, and a sprinkling of bread crumbs.
- Repeat two times.
- Cover with sliced tomatoes and sprinkle with parmesan cheese.
- Bake in a 325 degree oven for 20 to 30 minutes.
