Spinach Casserole (Salenchi)

  1. Bring water and olive oil to a boil and add spinach and seasonings.
  2. Lower heat and cook until defrosted.
  3. Drain.
  4. Layer 1/3 of spinach in a one quart casserole dish.
  5. Top with 1/3 mozzarella cheese, 1/3 pepperoni, 1/3 mushrooms, and a sprinkling of bread crumbs.
  6. Repeat two times.
  7. Cover with sliced tomatoes and sprinkle with parmesan cheese.
  8. Bake in a 325 degree oven for 20 to 30 minutes.
