Jambalaya
- 1/2 lb. salt pork
- 1 lb. smoked sausage, sliced
- 1 lb. ham, cubed
- 1 lb. shrimp, cleaned and deveined
- 1 1/2 onions, chopped
- 2 chopped garlic cloves
- 1 green pepper, chopped
- 2 Tbsp. butter
- 2 or 3 sprigs fresh parsley
- 1/2 tsp. cloves
- 2 chopped bay leaves
- 2 or 3 sprigs thyme
- 5 c. tomato sauce
- 5 c. water or chicken broth
- black and cayenne pepper
- seasoning salt
- 5 c. long grain rice
- Fry salt pork cubes until lightly browned and pour off fat. Add butter, onion, garlic and bell pepper and saute for a few minutes.
- Add sausage, ham, shrimp and herbs and continue to simmer for 8 to 10 minutes.
- Add tomato sauce and water or broth. When the mixture starts to boil, add pepper and salt, if needed. Add rice and allow to cook until rice is tender.
- Stir from bottom to mix ingredients well.
