Brushetta Recipe
- 2 x 2.5 cm, (1 inch) thick slices of ciabatta bread
- 1 tsp Black or possibly green olive pate
- 6 x Red cherry tomatoes
- 6 x Yellow cherry tomatoes
- 1 Tbsp. Minced fresh basil
- 2 tsp Extra virgin olive oil
- Toast the bread on both sides, and then spread one side with the olive pate.
- Halve the tomatoes and place in a small saucepan with the basil and extra virgin olive oil and hot through over a low heat for 2 min.
- Alternatively heat the tomatoes in a microwave proof container for 1-2 min on medium power.
- The tomatoes should retain their shape after heating.
- Place the tomatoes on top of the olive pate and spoon over the tomato juices from the pan or possibly microwave dish.
- Serve imediately.
