Sausage Stuffed Mushrooms

  1. Line a glass pie plate with 2 paper towels.
  2. Clean mushrooms.
  3. Remove stems and place caps top-side down on lined pie plate.
  4. Chop stems coarsely.
  5. Crumble sausage into a 2-cup glass measure; add mushrooms stems and garlic.
  6. Microwave on high 2 minutes or until sausage is no longer pink.
  7. Stir to break up meat.
  8. Stir in 1/2 cup mozzarella, green onions, Parmesan and Italian seasoning.
  9. Divide mixture and mound atop mushroom caps.
  10. Sprinkle with remaining mozzarella and some paprika.
  11. Cover lightly with wax paper.
  12. Rotating dish midway through cooking, microwave on high 3 to 5 minutes.
  13. Let stand briefly.
