Cookies and Cream Cafe' Pie

  1. Stir crust mix and butter thoroughly with spoon in medium bowl until crumbs are well moistened.
  2. Press onto bottom and up side of 9 inch pie plate.
  3. Pour cold milk into large bowl.
  4. Add filling mix and coffee.
  5. Beat with electric mixer on low speed 30 seconds.
  6. Beat on high speed 3 minutes.
  7. DO NOT UNDERBEAT.
  8. Reserve 1/2 cup of the crushed cookies.
  9. Gently stir in remaining crushed cookies into filling until well blended.
  10. Spoon mixture into prepared pie crust.
  11. Top with reserved cookies.
  12. Refrigerate 4 hours or until firm or freeze 2 hours to serve frozen.
  13. (I have tried both ways-both are very good).
