Roast Beef Sandwiches with Blue Cheese Dressing

  1. Using fork, mash cheese in bowl.
  2. Whisk in sour cream, mayonnaise and Worcestershire.
  3. Season with salt and pepper.
  4. Spread 8 bread slices with butter.
  5. Spread remaining 8 bread slices with cheese dressing; mound beef atop dressing, dividing equally.
  6. Sprinkle with salt and pepper.
  7. Top with peppers, if desired, then arugula and buttered bread slices.
  8. Cut sandwiches in half.
  9. (Can be made 6 hours ahead.
  10. Wrap in foil and refrigerate.)
