Braised Onion Sauce for Pasta
- 1/2 pound butter
- 1 tablespoon sugar
- 1 1/2 pounds onions peeled, sliced
- 1/4 cup madeira wine
- 1 x parmesan, parmigiano-reggiano cheese, grated grated
- Saute onions in butter.
- Stir in sugar, lower heat and cook very slowly one hour.
- Stir in the wine, cook briefly, and pour over a pound of freshly cooked pasta.
- Pass the Parmesan.
