Texas Style Lasagna
- 1 1/2 lbs ground lean beef
- 1 pkg (1 1/4 oz) taco seasoning mix
- 1 can (14 1/2 oz) diced tomatoes, undrained
- 1 can (15 oz) tomato sauce
- 1 can (4 oz) green chilies, chopped
- 2 cups low fat small curd cottage cheese
- 2 eggs or egg beaters, beaten
- 12 (6-inch) corn tortillas
- 3 1/2 to 4 cups low fat shredded Monterey Jack cheese
- In a large skillet, brown meat and drain.
- Add taco seasoning mix, tomato sauce and chilies; mix well.
- Simmer uncovered for 15 to 20 minutes.
- Combine cottage cheese and eggs.
- In a greased 13x9x2 baking dish, layer tortillas, half the meat sauce, half the cottage cheese mixture and half the Monterey Jack cheese; repeat layers. Bake uncovered at 350u0b0 for 30 minutes or until bubbly. Let stand 10 minutes before serving.
- 10 - 12 servings.
