Swordfish with Vegemite and Walnut Pesto

  1. BLEND or process together, briefly, the walnuts, Parmesan, parsley, VEGEMITE and garlic.
  2. Add the oil and process until just combined.
  3. PLACE the swordfish on a paper lined baking tray and spoon some pesto onto each piece.
  4. Bake in a hot oven 200oC for 10 minutes or until the fish is cooked.
  5. Place fish on serving plates with vegetables.
  6. Serve immediately.
