Swordfish with Vegemite and Walnut Pesto
- 1 cup walnuts
- 1 cup shredded Parmesan cheese
- 1/2 cup roughly chopped flat leaf parsley
- 1 1/2 tablespoons VEGEMITE
- 2 cloves garlic
- 3/4 cup oil
- 6 swordfish steaks
- Steamed vegetables and roasted tomatoes, for serving
- BLEND or process together, briefly, the walnuts, Parmesan, parsley, VEGEMITE and garlic.
- Add the oil and process until just combined.
- PLACE the swordfish on a paper lined baking tray and spoon some pesto onto each piece.
- Bake in a hot oven 200oC for 10 minutes or until the fish is cooked.
- Place fish on serving plates with vegetables.
- Serve immediately.
