Mixed Kebabs
- 2 teaspoons balsamic vinegar
- 1 teaspoon dried oregano, crumbled
- 1 teaspoon bottled minced garlic or 2 medium garlic cloves, minced
- 1 teaspoon olive oil
- or
- 2 teaspoons lime juice
- 1 teaspoon bottled minced garlic or 2 medium garlic cloves, minced
- 1 teaspoon canola or corn oil
- 1/2 teaspoon garlic powder
- or
- 2 teaspoons soy sauce (lowest sodium available)
- 1 teaspoon bottled minced garlic or 2 medium garlic cloves, minced
- 1 teaspoon canola or corn oil
- 1/2 teaspoon toasted sesame oil
- 12 raw peeled shrimp (about 6 ounces), rinsed and patted dry
- 5 ounces boneless, skinless chicken breasts, all visible fat discarded, cut into 3/4-inch cubes
- 5 ounces boneless sirloin steak, all visible fat discarded, cut into 1-inch cubes
- In a large shallow glass dish, stir together the ingredients for your choice of marinade.
- Add the shrimp, chicken, and steak, turning to coat.
- Cover and refrigerate for 5 to 10 minutes.
- Meanwhile, preheat the grill on medium high.
- Remove the shrimp, chicken, and steak from the marinade, letting any excess drip off.
- Discard the marinade.
- Thread the kebab ingredients alternately on four 10-inch metal skewers.
- Grill the kebabs for 3 to 4 minutes on each side, or until the shrimp turns pink and is cooked through, the chicken is no longer pink in the center, and the steak is the desired doneness.
- Buy preskewered kebabs at the supermarket.
- Be sure to choose the leanest ones.
- If you want your steak cubes well done, use 3/4-inch cubes.
- The 1-inch size will give you medium-well in this recipe.
