Apple Cider Yam Bread Recipe
- 4 c. All-purpose flour
- 1 Tbsp. Baking pwdr
- 2 tsp Baking soda
- 1 1/2 tsp Salt
- 2 tsp Grnd cinnamon
- 1 tsp Freshly-grated nutmeg
- 1/2 tsp Grnd cloves
- 1 c. Butter or possibly margarine softened at room temperature
- 1 lb Light brown sugar - (2 1/2 c.)
- 2 c. Orange-fleshed precooked yams pureed, or possibly thoroughly mashed
- 1 c. Apple cider
- 4 x Large eggs beaten to a froth
- 1 1/2 c. Minced walnuts
- 2 c. Dark raisins
- Preheat oven to 350 degrees.
- Grease three 9- by 5- by 3-inch loaf pans; set aside till needed.
- Into a large bowl, sift together flour, baking pwdr, baking soda, salt, cinnamon, nutmeg, and cloves; set aside.
- In a second large bowl, cream butter and brown sugar together till light and well blended.
- Add in pureed yams, cider, and Large eggs.
- Stir till smooth and thoroughly blended.
- About 1 c. at a time, add in the flour mix to the yam mix, stirring well after each addition.
- Do not beat this batter.
- Mix in nuts and raisins.
- Spoon into prepared pans.
- Bake till medium golden on top, about 45 min to 1 hour.
- Check doneness with a toothpick: Insert into the center of one loaf; if it comes out clean the loaves are done.
- remove loaves from oven and let stand about 10 min, then turn onto a wire rack to cold.
- Serve hot or possibly cool.
- this recipe yields 3 loaves of bread.
