Garlic-Ginger Chicken with Sweet Potatoes
- 2 pounds sweet potatoes, or yams peeled, cut up
- 3 1/2 pounds chicken, whole cubed
- 1 cup soy sauce, tamari
- 1/4 cup sherry dry
- 3 tablespoons brown sugar
- 1 teaspoon ginger ground
- 4 each garlic cloves crushed
- 2 each scallions, spring or green onions finely diced
- Thoroughly combine soy sauce, sherry, brown sugar, and ginger.
- Pour over 20 potatoes and chicken in baking dish.
- Cover and marinate 1 hour.
- Turn over chicken and potatoes and marinate additional hour.
- Preheat oven to 325F (160C).
- Bake 25 minutes.
- Turn over potatoes and chicken; baste.
- Bake 30 minutes more.
