Apple-Raisin Muffins
- 2 c. all-purpose flour
- 1/2 c. packed brown sugar
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. ground cinnamon
- 1/2 tsp. salt
- 3/4 c. buttermilk
- 1/2 c. unsweetened applesauce
- 2 egg whites
- 2 Tbsp. canola oil
- 1 c. chopped, peeled apples
- 1/3 c. dark seedless raisins
- Preheat oven to 400u0b0.
- Coat 12 muffin tin with nonstick vegetable spray.
- Combine flour, sugar, baking powder, baking soda, cinnamon and salt in large bowl.
- Make well in center.
- Stir together buttermilk, applesauce, egg whites and canola in a small bowl.
- Pour mixture into well of dried ingredients.
- Stir until evenly moistened.
- Gently fold in apples and raisins.
- Divide batter evenly among 12 muffin tins.
- Bake at 400u0b0 for 25 minutes or until toothpick comes out clean.
- Cool on wire rack.
- Each muffin contains 152 calories and 3 g. fat.
