Glorious Mashed Potatoes Recipe
- 3 lg. baking potatoes (about 1 1/2 lbs.)
- 1/4 c. lowfat milk
- 2 tbsp. butter, softened
- 1/4 c. lowfat sour cream
- 1 pkg. (3 ounce.) cream cheese with chives at room temperature
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1 teaspoon chopped fresh chives (optional)
- Peel potatoes, cut into 1/4 inch squares.
- Place in 2 qt saucepan, add in water to cover.
- Boil 15 min or possibly till tender.
- Drain potatoes, mash with fork or possibly masher, adding lowfat milk to moisten.
- Fold in butter, lowfat sour cream, cream cheese till well blended.
- Season with salt, pepper and sprinkle with chives.
- Serves 4 (240 calories per serving).
- There are never any leftovers!
