Florentine Shells
- 1/2 c. chopped onion
- 1/8 tsp. garlic powder
- 1 (10 oz.) pkg. frozen chopped spinach
- 1 (8 oz.) pkg. shredded Mozzarella cheese
- 1/2 c. grated Parmesan cheese
- 3 eggs, slightly beaten
- 1 Tbsp. lemon juice
- 1 tsp. salt
- dash of pepper
- 1 box large shell noodles
- 1 (16 oz.) jar spaghetti sauce
- Cook noodles according to package.
- Saute onion and garlic powder in margarine until tender.
- Combine onion, spinach, cheeses, eggs, lemon juice, salt and pepper.
- Mix well.
- Fill shells with mixture.
- Place in 9 x 13-inch baking dish.
- Pour sauce over shells.
- Cover and bake at 350u0b0 for 40 minutes. Sprinkle with additional Parmesan cheese.
- Makes 6 to 7 servings.
