Mother's Beet Pickles Recipe

  1. The above makes sufficient brine for about 3 1/2 pints.
  2. Cook beets till tender.
  3. Peel and cut to desired size.
  4. put cloves and pickling spices in a cloth bag.
  5. Mix all brine ingredients together and bring to a boil.
  6. Add in cut beets and cook till beets are heated through.
  7. Put 1 stick cinnamon in each jar.
  8. Fill jars and seal.
