Mother's Beet Pickles Recipe
- 2 c. sugar
- 2 c. white vinegar
- 1/2 c. water
- Few cloves
- Few pickling spices
- 1 stick cinnamon for each jar
- The above makes sufficient brine for about 3 1/2 pints.
- Cook beets till tender.
- Peel and cut to desired size.
- put cloves and pickling spices in a cloth bag.
- Mix all brine ingredients together and bring to a boil.
- Add in cut beets and cook till beets are heated through.
- Put 1 stick cinnamon in each jar.
- Fill jars and seal.
