Coconut Spinach
- 2 (8 ounce) packages frozen spinach, defrosted and pressed as dry as possible
- 12 cup coconut milk
- vegetable oil
- salt and pepper
- 14 cup chopped scallion
- 14 cup shredded coconut
- Place spinach in a pot or microwave safe dish with coconut milk and heat until warm in the microwave or on the stove top.
- Stir in oil, salt and pepper to taste.
- Sprinkle the scallions and shredded coconut on top as a garnish.
