Chili
- 1 lb. lean ground beef or turkey
- 2 large onions, chopped
- 2 (15 1/2 oz.) cans red kidney beans
- 2 (15 1/2 oz.) cans dark red kidney beans
- 1 (28 oz.) can peeled Italian style tomatoes, cut up
- 1 (14 1/2 oz.) can stewed tomatoes
- 1/4 c. chili powder or to taste
- 1 tsp. garlic powder
- 1 tsp. oregano
- 1/4 tsp. ground red pepper (optional)
- 1/8 tsp. pepper
- In a large Dutch oven, cook the ground meat and chopped onions until meat is brown and onions are tender; drain off fat.
- Stir in the undrained beans and tomatoes.
- Add chili powder, garlic powder, oregano and pepper.
- Bring to boiling and reduce heat.
- Simmer, uncovered, about 1 1/4 hours, or until of desired consistency, stirring occasionally.
- Makes 12 (1-cup) servings.
