Ground Beef Stroganoff

  1. Saute onions and garlic in olive oil until slightly limp.
  2. Add ground beef and cook until brown (3 to 4 minutes over medium-high heat).
  3. Push meat and onion mixture to one side of pan and add mushrooms (you may need to add a drop of oil).
  4. Saute mushrooms until they begin to soften, and then mix contents of pan together. Season with pepper, paprika and nutmeg.
  5. Add soup (undiluted) and wine.
  6. Simmer for a few minutes.
  7. Add parsley and sour cream just before serving.
  8. (I frequently omit the sour cream!)
